The Kai Kiritsuke chef’s knife from KAI Shun Classic has a core of VG MAX steel with 61 (±1) HRC hardness. With 32 layers of Damascus steel, the knife is both hard and flexible. A double-edged blade and a slim pakkawood handle in a Japanese chestnut shape provide comfort and safety. The handle is moisture-resistant thanks to high-quality resins and an integrated tang for stability.
